Oven Omelette

Oven Omelette
1 tbsp butter
5 eggs
2 tbsp water
1 medium sized tomato, slice into thin wedges (discard seeds)
2 green onions, chopped
1 tsp oregano
2 tbsp parsley, chopped
1/2 cup mozzarella, grated
Salt
Pepper

Pre-heat the oven to broil (grill) and place oven rack in the highest position.

In a small bowl, whisk the eggs with water. Add salt and pepper.

You need a 30 cm wide pan (oven safe dish or pan with heatproof handle). Melt the butter in it on medium-high heat. Pour in the eggs and spread them all over the pan. Cook until about 2/3 of the eggs are done. Turn off the heat. Place tomatoes on top as seen in the picture. Spread the onions, oregano and parsley equally on top, and add in the mozzarella. Place in the oven and cook for about 2 minutes until the cheese melts.

Serve while still hot with fresh Italian or French bread.

Bread with Mozzarella

Bread with Mozzarella
1 dinner roll bread
7-8 slices mozzarella

Sauce:
2 tbsp extra virgin olive oil
1 tsp oregano
Salt
Pepper

Garnish:
1 tomato, diced
2-3 green onions, chopped

Make 7-8 slices on top of the bread but don't cut through to the bottom. Spread the sauce mixture on top with a brush or your fingers. Place mozzarella slices between the bread slices.

Preheat the oven to 175 C (350 F). Place the bread on a tray and bake for about 8 minutes until chese melts. Don't overbake!

Place the bread on a service plate and sprinkle tomato and green onions on top. Serve while still hot.

Red Pepper Soup

Red Pepper Soup
2 red bell peppers, chopped
1 tbsp butter
1 small onion, chopped
2 garlic cloves, chopped
2 cups vegetable broth, or water
1/4 cup heavy cream (optional)
Black pepper

Melt the butter in a medium pot over medium heat. Place the red bell peppers and onion, and sautee for 5-10 minutes. Then add the garlic, black pepper and pour in the vegetable broth. Reduce the heat to low and simmer for 20 minutes. Pour into a blender and puree until smooth. Strain the soup and pour back into the pot. Cook on medium-low heat for a couple more minutes. If you like, you can put cream or any other type of cheese on top before serving.

Or if you like yo may garnish the soup with any kind of cheese, like
feta or mozzarella etc.
