Red Pepper Soup

Red Pepper Soup
2 red bell peppers, chopped
1 tbsp butter
1 small onion, chopped
2 garlic cloves, chopped
2 cups vegetable broth, or water
1/4 cup heavy cream (optional)
Black pepper

Melt the butter in a medium pot over medium heat. Place the red bell peppers and onion, and sautee for 5-10 minutes. Then add the garlic, black pepper and pour in the vegetable broth. Reduce the heat to low and simmer for 20 minutes. Pour into a blender and puree until smooth. Strain the soup and pour back into the pot. Cook on medium-low heat for a couple more minutes. If you like, you can put cream or any other type of cheese on top before serving.

Or if you like yo may garnish the soup with any kind of cheese, like
feta or mozzarella etc.
